Jessica B. Harris’s absorbing new book, “High on the Hog: A Culinary Journey from Africa to America” zeroes in on what she sees as the two divergent strands of African-American cooking. The first reveres homey staples like corn pone, fried chicken and chitterlings (a pig’s small intestines), and embraces those cooks who can, as she writes, “put a hurtin’ on a mess of greens.”

The second strand is aspirational and omnivorous. Historically, it includes recipes from, she says, “Big House cooks who prepared lavish banquets, caterers who created a culinary cooperative in Philadelphia in the 19th century, a legion of black hoteliers and culinary moguls and a growing black middle and upper class.”

African-American males who can have their blood pressure gauged at their local barbershop have a significantly higher chance of better hypertension (high blood pressure) control, researchers reveal in Archives of Internal Medicine.

High blood pressure, or hypertension is a condition in which blood pressure in the arteries is chronically high. The heart beats, forcing blood through the arteries to all parts of the body. Blood pressure is the force of blood that is pushing up against the blood vessel walls. The heart has to work harder to pump if that pressure is too high, raising the risk of organ damage, heart attack, heart failure, renal failure or aneurysm.

What is high fructose corn syrup?

In 1957, Richard O. Marshall and Earl R. Kooi developed a process to convert some of the glucose of corn syrup to fructose to tailor its level of sweetness.

The corn syrup is made by first steeping kernels of corn in a solution of 122°F-140°F water and a small percentage of sulfur dioxide – to prevent excessive bacterial growth – for 30-40 hours. This hydrates the kernels, more than doubling their size and breaks gluten bonds down to release starch.

In the Fall of 2009 I decided that I wanted to lose at least 12 lbs.; weighed 162 lbs. By Winter of2009/2010 I managed to gain an additional 8 lbs. One of my best friends told me that as long as my jeans still fit that I’d be fine… Well, my jeans (even the “safety/fat pants”) didn’t fit well anymore… something really had to be done. And there was another issue, sometime last year I got the ambitious idea to run the ING marathon in 3 years. Yes, indeed, something really had to be done!
